Baked Apple with Vanilla Sauce

Apples

Put two tablespoons of raisins in a glass with water and let them steep for about half an hour.

Drain the raisins and mix with two tablespoons of almonds, a pinch of cinnamon and either a tablespoon of sugar or a handful of marzipan.

Core two sour apples with a apple corer and fill the apples with the raisin mixture. Put the apples in a oven dish and bake for 30 minutes at 200 degrees Celsius.

Vanilla Sauce

Put three cups of milk and two centimeter of a vanilla pod in a pot and bring to a boil.

Mix three tablespoons of milk with four tablespoons of vanilla sugar and 40 grams of starch. Add the mixture to the boiling milk while stirring and reduce the heat.

Red Cabbage

Peel and dice one onion and cook translucent in a pot with one tablespoon of vegetable oil.Peel and dice one sour appleand add to the onions.Add one bay-leaf, four cloves and one centimeter of a stick of cinnamon.

 

Cut half a red cabbageinto slices and put in to the pot.Add half a cup of apple juice and two tablespoons of vinegar.

Let it simmer for 30-40 minutes at medium heat.

Serve with potatoes or dumplings.

Double Chocolate Marshmallow Ice Cream

 Chocolate Ice Cream Base

Melt 100 grams of dark chocolate together with one cup of milk. Remove from the heat and let cool down.Whisk two eggs until light and fluffy, add one cup of sugar and whisk until completely blended.

Add one cup of cream, one tablespoon of vanilla sugar and a pinch of salt.

Pour the chocolate mixture into the cream mixture and blend.

Put in the fridge for at least 8 hours.

Transfer the cream mixture to an ice cream maker and freeze following the manufacturer’s instructions.After the ice cream stiffens add 50 grams of chopped white chocolate, 50 grams of chopped milk chocolate and a handful of chopped marshmallows.

Serve with whipped cream, peaches, chocolate cookies and chocolate sauce.

Alternatives: Vanilla Ice Cream Base

Pour in two cups of cream and one cup of milk and whisk to blend.

Celery with Creamy Lentils

Celery with Lentils on Pasta

Celery and Onions in a pot Peel and dice one onion. Heat a tablespoon of olive oil in a pot and cook onions translucent.
 
Slice one celery and add to the onions with a pinch of rosemary.
Add two cups of stock and 400 grams of red lentils.
 
Let it simmer over small heat for 20 minutes. Add one cup of cream and let simmer for another 20 minutes.
 
Season with salt and pepper and serve with pasta or potatoes.

Creamy Savoy Cabbage

Cut away the stem of the leaves of one savoy cabbage. Put the leaves in a sieve.
 
Put some water in a pot, hang the sieve in the pot, close the pot and bring the water to a boil. Blanch the cabbage in the steam for about 10 minutes.
 
Rinse the blanched cabbage with cold water and cut it into strips.
In a small pot melt two tablespoons of butter under constant stirring add four tablespoons of flour. Heat and stir until the flour becomes golden, then add one cup of milk and one cup of cream. Bring to a boil.
 
Add the cabbage stripes and 250 grams of diced bacon. Cover the pan and let it simmer at medium heat for 10 minutes.Serve with potatoes.
