Baked Parsley Root with Garlic Dip

(2 servings)

 

Peel 500 grams of parsley root and one red onion. Wash three capsicums.

Slice the vegetables and place them on a oven tray. Sprinkle with one teaspoon of dried thyme, one teaspoon of dries rosemary, three tablespoon of olive oil and salt and pepper.

Bake at 180 degrees for about half an hour.

Feta Cheese with Grounded Garlic

Blend 250 grams of yoghurt, 200 grams of feta and one teaspoon of grounded garlic.

Serve the baked vegetables with fresh baked ciabatta bread and the feta dip.

Muffins with steamed Apples

Steamed Apple Muffins

Peel and dice one kilogram of sour apples.

Put the apples together with 100 grams of brown sugar and one glass of Calvados in a pot and bring it to a boil.

Let it simmer for 5 minutes, then turn off the heat and leave the apples to cool down.

Sponge Mixture Mix 125 grams of margarine, 300 grams of sugar, six eggs, 250 grams of flour, one tablespoon of baking powder and 100 grams of grounded almonds.

Beefsteak with Thyme

In a pan with two tablespoons of olive oil sear four beef steaks. Sear Meat

Add one teaspoon of dried thyme, four bay leaves and four teaspoons of butter.

Cover the pan with kitchen foil and bake it at 120 degrees Celsius for 45 minutes.

 

Caramelized Carrots

Cook half an onion in one tablespoon of butter and one tablespoon of sugar translucent Caramelize Onions

Peel and slice four carrots and add them together with 125 millilitres of stock to the caramelized onions.

Cook the carrots for 15 minutes. Then add one handful of parsley.

Whisk 2 egg whites with one pinch of salt until soft peeks rise.

Add half a cup of icing sugar, one tablespoon of vanilla sugar and one tablespoon of white vinegar.

On a baking tray lined with baking paper form two circles with a dent in the middle. Bake at 180 degrees Celsius for 10 minutes and let them rest in the warm oven for one hour.

Serve each pavlova with one tablespoon of whipped cream or yoghurt and one handful of raspberries.

Baked Pasta with Red Cabbage and Thyme

Cook 250 grams of pasta according to the package description.

Remove the outer leaves of one red cabbage, remove the stem and cut it into fine stripes.

Red Cabbage on Translucent Red Onions

In a big pan cook one peeled and diced red onion translucent in one tablespoon olive oil.

Add the sliced red cabbage and roast it gently.

Add half a cup of raisins, half a cup of water, one tablespoon of thyme and salt and pepper. Roasted Red Cabbage with Raisins and Thyme
Layered Pasta and Red Cabbage In a greased oven dish layer the cooked pasta and the roasted red cabbage.

Carrot Cake

Beat 250 grams of margarine and 200 grams of cane sugar until light and fluffy.

Add four eggs one by one.

Grated Carrot and Chopped Almonds with Cinnamon and Nutmeg Mix with 225 grams of flour and fold in 350 grams of grated carrots, 60 grams of chopped almonds, one tablespoon of ground cinnamon and one teaspoon of ground nutmeg.
Put the dough in a greased spring-form pan. Unbaked Carrot Cake
Baked Carrot Cake Bake at 160 degrees Celsius for 50 minutes and let the cake cool down.

 

Cream Cheese Lemon Frosting

 

Put 200 grams of cream cheese, 60 grams of butter, 60 grams of sugar and one tablespoon of lemon juice in a bowl. Cream Cheese, Butter, Sugar and Lemon Juice
Cream Cheese Topping Beat until soft peaks rise.
