Cook 500 grams of potatoes in water for 20 minutes. |
| Peel and mash the potatoes. |

Mix 80 grams of butter and one pinch of curcuma. |
| Add eight egg yolks. |

Fold in 120 grams of starch and 80 grams of flour. |
| Add the mixture, one pinch of nutmeg, salt and pepper to the potato mash. |

Whip eight egg whites and add them to the potato mash. |

| Grease 24 muffin cups.
Add one teaspoon of the mixture into each and bake them for 5 minutes at 250 degrees Celsius. |
