Cocoa Bread

(1 loaf)

Knead 90 g of sour dough, 160 g of spelled flour, 15 g of sugar, 10 g of cocoa powder and 125 g of water into a dough and let it rest for 30 minutes.
Cut 100 g of dried fruits (4 apricots, 3 figs, handful of cranberries) into fine dices.
Knead the diced fruits and 40 g of cocoa nibs into the dough.
Dust a mold with flour, put in the dough and dust with flour from above. Let the bread rest for 12 hours in the refrigerator.
Preheat the oven to 300 degrees Celsius. Then bake the bread for 30 minutes at 220 degrees Celsius.

Spelled Sourdough Rolls

Knead 10 g  of sourdough, 80 g of fine spelled flour, 40 ml of water and 20 g brown sugar into a dough and let it rise for 24 hours.
Add 65 g spelled flour, 200 g fine spelled flour, 4 g salt and 5 g sugar, as well as 95 g milk, 1 egg and 40 g butter and knead into a dough.
Form 6 rolls, cut crosswise and let them rise overnight.
Bake in preheated oven at 200 degrees Celsius for 20 minutes.

Burger Buns

Place 200 grams of sourdough, 175 grams of spelled flour, 175 grams of wheat flour, 10 grams of salt, 40 grams of sugar and half a cube of fresh yeast in a bowl.
Add three eggs and 75 ml of milk and knead into a dough. Let the dough rest for one hour.
Knead in 150 g of butter and let it rest for another hour (or overnight in the fridge).
Form 16 buns of 60 g, place them on a baking sheet and brush them with a mixture of one egg and two tablespoons of milk.
Wait one hour, then brush the buns again and sprinkle the buns with two tablespoons of sesame.
Bake the buns for 20 minutes at 200 °C.

Rye Spelled Bread with Sunflower Seeds

Place 200 grams of sour dough starter in a  bread pan.
Add 300 grams of spelled flour and 100 grams of rye flour.
Add 7 grams of dry yeast, one tablespoon of sugar and 200 ml warm water and knead everything to a dough.
After one hour add one handfull of sunflower seeds, knead again and let it rest for an additional hour.
Brush the dough with water and bake it at 180 ° Celsius for one hour. For a particularly crunchy crust, bake the bread upside down for additional 10 minutes.

Travel fruit cake

Stir 115 g of margarine with 115 g of sugar until frothy. margarine_sugar

Add 225 g of flour and 1 teaspoon of baking powder. flour
chocolate_fruit Add 150 g of grated chocolate, 200 g of chopped dried fruits (prunes, figs) and 2 tabelspoons of Amaretto.

Capsicum Feta Cheese Cake

 

Dice one green and one red capsicum. Diced Capsicum
