Black and White Pudding Cherry Muffins

Put two tablespoons of raisins in a glass with water and let them steep for about half an hour.
Drain the raisins and mix with two tablespoons of almonds, a pinch of cinnamon and either a tablespoon of sugar or a handful of marzipan.
Core two sour apples with a apple corer and fill the apples with the raisin mixture. Put the apples in a oven dish and bake for 30 minutes at 200 degrees Celsius.

Put three cups of milk and two centimeter of a vanilla pod in a pot and bring to a boil.
Mix three tablespoons of milk with four tablespoons of vanilla sugar and 40 grams of starch. Add the mixture to the boiling milk while stirring and reduce the heat.
Whisk two eggs until light and fluffy, add half a cup of sugar and two tablespoons of vanilla sugar and whisk until completely blended.
Pour in two cups of cream and one cup of milk and whisk to blend.
Put in the fridge for at least 8 hours.

Instead of mixing the shake with milk you can use two cups of orange juice. Leave out the sugar unless you like it really sweet. You might also add a handful of blueberries. |
Inspired by danish oatmeal cookies I created some softer oatmeal cookies with fruit pieces.
Bring 175 ml of milk, 1 tablespoon of brown sugar and a pinch of salt to a boil. Add 40 grams of oatmeal and turn off the heat and let the porridge cool down.
Cut 80 grams of dried dates into small pieces and put them in a bowl with hot water. After 30 minutes drain off the water.
In a bowl whisk 100 grams of margarine with 75 grams of brown sugar and 1 egg. Add a pinch of cinnamon and the cooled down porridge as well as the dates and 125 grams of plain flour. Mix everything and place dough with a teaspoon in small heaps on two baking trays.
Place the trays in the oven and bake for 16 minutes at 160 degrees Celsius. Let the cookies cool down on a wire rack.
Whip 200 grams of margarine and 175 grams of sugar until creamy. Then add 3 eggs and mix until combined.
Gradually add 350 grams of plain flour, 30 grams of vanilla sugar, 1 tablespoon of backing powder and 125 ml of water.
Pour one glass of cherries (400 grams of cherries and 300 ml of sugar water) into a pot and bring it to a boil. In a small bowl mix 40 grams of starch and 30 grams of vanilla sugar (alternatively you can use one package of vanilla pudding powder and 30 grams of sugar) with 50 ml of water. Pour the mixture into the boiling cherries and turn of the heat.
In winter you can add some cinnamon to the cherries.
In summer you can eat the waffles with fresh blueberries and ice cream.
