Feta Courgettes Shrimp Pasta

Salmon with Rocket Mustard Sauce and Pearled Spelt

Salmon with Rucola Mustard Sauce and Pearled Spelt

(2 servings)

 

Wash 160 grams of pearled spelt. Washed pearld spelt
Pearled Spelt with Spring Onions Add 200 millilitres of water and four sliced spring onions and let it simmer for 20 minutes.
In a small pot boil down one cup of cream together with one teaspoon of mustard. Mustard Cream
Salmon with Potatoes In a small pan with one teaspoon of vegetable oil sear two salmon filets together with three sliced tomatoes.
Let the salmon simmer on the skinny side until done. Salmon with Potatoes
Rucola Wash and cut two handfuls of rocket salad and add it to the mustard cream.

Salmon with Spice Crackling with Courgette and Carrot

(2 servings)

Grind one tablespoon of pistachios, one tablespoon of sesame, one teaspoon of coriander, one teaspoon of cumin and one teaspoon of black pepper seeds. Pistachios, Sesame and Spices
Roasted Spices Roast the spices in a pan.
Mix the roasted spices with one tablespoon of crème fraîche, one egg yolk, one teaspoon of paprika powder and one teaspoon of salt. Crackling Mixture
Unbaked Salmon Spread the crackling mixture on two salmon filets and bake them for 15 minutes at 180 degrees Celsius.

 

Sauce

In a small pot with half a teaspoon of saffron and half a teaspoon of grounded garlic melt one tablespoon of butter. Butter with Saffron
Saffron Cream Add one cup of cream and allow it to reduce until thickened.

 

Vegetables

Peel and dice one onion and cook it translucent in one tablespoon of vegetable oil. Translucent Onions
Carrots Add 400 grams of peeled and sliced carrots and roast them in five minutes.
Add one washed and sliced courgette and roast the slices for additional five minutes. Sliced Courgette
Freshly Squeezed Orange Juice Squeeze one orange.
Add the freshly squeezed juice and salt and pepper to taste to the vegetable slices and let them simmer for 5-10 minutes. Cooked Courgette and Carrots
Salmon with Spice Crackling with Courgette and Carrot Serve the vegetables together with the fish and sauce and some cooked pasta.

Orange Vodka Salmon with Beet Root

Orange Vodka Salmon with Beet Root

(2 servings)

Wash four baking potatoes and wrap each potato together with one teaspoon of sugar, one teaspoon of dried rosemary and one teaspoon of butter into a piece of cooking foil.

Put the potatoes at 200 degrees Celsius for 45 minutes into the oven.

Salmon with Salt and Pepper Place two salmon filets in a oven proof dish and spice them with salt, pepper and zest of one orange.

Make a vinaigrette out of two tablespoons of orange juice, two tablespoons of vodka and two tablespoons of olive oil and pour it over the salmon.

Reduce the oven heat to 100 degrees Celsius and place the salmon next to the potatoes for 70 minutes.

Beet Root in Water Cook 500 grams of beet root for 30 minutes.
Make a vinaigrette out of four tablespoons of white vinegar, two tablespoons of olive oil, two tablespoons of water and one teaspoon of mustard. Mustard Vinaigrette
Mustard Vinaigrette Add salt and pepper to the vinaigrette and place it into a pot over low heat together with the peeled and sliced beet root.

Peel and dice one onion and fry them in one tablespoon of oil until translucent. Fried Onions
Soup Vegetables Add 200 grams of frozen soup vegetables and cook in the closed pan for 10 minutes.
Add 100 grams of smoked salmon and one glass of cream and add salt and pepper to taste.
 
Cook for 5 minutes and serve with 100 grams of cooked pasta.

Salmon Avocado Wraps

Salmon Avocado Wrap

(4 servings)

 

Wash the leaves of one cos lettuce, wash and cut one capsicum into strips, peel and cut one avocado into slices. Vegetables for Wraps
Salmon on Wrap Warm up four tortillason a piece of paper towel for 60 seconds in the microwave.
 
Spread each tortilla with one tablespoon of cream cheese (100 grams in total) and put two slices of smoked salmon (200 grams in total) onto each tortilla.
Put the vegetables on top of the salmon and allow for a margin. Unrolled Wrap
Half-folded Wrap Fold in the left and right side of the tortilla and then roll the tortilla from bottom to top.
