Pumpkin Ravioli with Sage Butter

Weigh 300 g of flour and place in a bowl with 3 eggs and 1 teaspoon of oil and a pinch of salt.
Knead the ingredients to a firm dough.
Core a hokkaido pumpkin, cut into slices and  peel, then finely chop the pulp.
Fry a finely diced onion in a tablespoon of oil until glassy.
Sauté the pumpkin cubes briefly, deglaze with half a cup of broth and then cook it for 15 minutes.
Season the filling with 50 g of ground cashews, 50 g of grated Parmesan and pepper.
Roll out the dough thinly, cut out rectangles, place one tablespoon of filling on each rectangle , close the rectangle and press the edges firmly with a fork.
Cook the ravioli in boiling water until they float on the surface, afterwards drain them.
Melt 80 g of butter with 6 leaves of sage in a small saucepan.
Serve the ravioli with the sage butter and perhaps some meat.

Nacho Salad

Put one glass of nacho dip salsa and one cup of creme fraiche in a large salad bowl.
Mix the sauce.
Wash and dice 250 g of tomatoes.
Distribute on the sauce.
Cut two spring onions into rings.
Blanch the onion rings with hot water.
Drain the onions and layer them on top of the tomatoes.
Drain one can of corn and layer them on top of the onions.
Cut one lettuce into small pieces.
Distribute the salad on the corn.
Distribute one bag of nachos on the salad.

Potato Muffin

 potatoes Cook 500 grams of potatoes in water for 20 minutes.
Peel and mash the potatoes.  mashed_potatoes
 butter Mix 80 grams of butter and one pinch of curcuma.
Add eight egg yolks.  egg_yolk
 flour Fold in 120 grams of starch and 80 grams of flour.
Add the mixture, one pinch of nutmeg, salt and pepper to the potato mash.  mash_butter

Grease 24 muffin cups.

Add one teaspoon of the mixture into each and bake them for 5 minutes at 250 degrees Celsius.

Turnip Greens Potato Mash with Apple Cutlet Rolls and Mushroom Sauce

 Turnip Greens Potato Mash

 Peel and dice half an onion and cook it translucent in a big pot with one tablespoon of vegetable oil.  Onions
Potatoes Peel and dice eight potatoes, add them to the onions and deglaze with two cups of vegetable stock.
 Wash four bunches of turnip greens and choput the leaves and stems separately.  Turnip Greens
 Simmering Potatoes  Let the potatoes simmer for 10 minutes, then add the stems and after 10 additional minutes add the leaves.

Apple Cutlet Rolls and Mushroom Sauce

 Cutlet Rolls  Batter four cutlets, spice them with salt, pepper and thyme, place apple slices on each cutlet, roll them and fix them with using yarn or spits.
 Roast the rolls together with half a diced onion in two tablespoons of vegetable oil.  Roastes rolls
 Apples and Mushrooms  Add and roast the diced left-overs of the apple and 250 grams of diced mushrooms.
 Deglaze with half a cup of cream and let it simmer for 5 minutes.  Rolls in Sauce

Warm Potato Salad

Warm Potato Salad

Cook 800 grams of washed potatoes in sufficient water for 30 minutes. Potatoes
Spring Onions In a large pan fry 4 sliced spring onionsone teaspoon of cumin and 4 diced capsicums, then spice them with salt, pepper and sugar.

 Deglaze with one glass of water and dissolve one stock cube. Stock Cube
Cooked Potatoes Add the cooked and diced potatoes, one can of corn, one can of kidney beans and one diced avocado.

Mozzarella stuffed Eggplant

Mozzarella stuffed Egg Plants

(2 servings)

 

Wash and slice one eggplant into six to eight slices. Sliced Egg Plant
Rosemary and Garlic Oil In a big pan heat two tablespoons of vegetable oil together with one tablespoon of garlic powder and two twigs rosemary.
Roast the eggplant slices in the spiced oil. Roasted Egg Plant
Stuff Egg Plant Slices with Mozzarella Cut one ball of mozzarella into slices and put one slice on each eggplant slice, then fold in the eggplant slice.
Deglaze the spiced oil with one can of diced tomatoes and add the stuffed eggplants. Stuffed Egg Plant in Tomatoes
Mozzarella Stuffed Egg Plant in Tomato Sauce Let the tomato sauce simmer for 10 minutes until the mozzarella is melted.
