Baked Topinambour with Bacon and Cheese Sauce

(2 servings)

 

Topinambour and Potatoes in oven dish Peel six potatoes and cut them into pieces. Wash half a kilogram of topinambour and cut it into pieces. Put the vegetable pieces in a greased oven dish.Season with salt and pepper and cover with 6-8 slices of smoked bacon.

Bake in the oven for 40 minutes at 180 degrees Celsius.

Serve with cheese sauce and vegetables.

Peel and dice one onion. In a small pot melt one tablespoon of butterand cook the onions translucent.Add 200 grams of cream cheese and 100 grams of grated Pecorino and let it melt. Onions, Cheese and Butter

Cabbage Salad

Cut or grate a white cabbage into small pieces. Chopped White Cabbage
White Cabbage with Onions and Spices Put the cabbage and two diced onions, one cup of sugar, two tablespoons of pepper and one tablespoon of salt in a big bowl.

Add one cup of vegetable oiltwo cups of aromatic vinegar and three cups of fizzy water and mix.

Cover the bowl with a plate slightly smaller than the bowl and weight it down with some cans so that the cabbage is below the surface.

Marinade for at least 24 hours. Drain before serving.

Can be stored in closed containers in the fridge.

Red Cabbage

Peel and dice one onion and cook translucent in a pot with one tablespoon of vegetable oil.Peel and dice one sour appleand add to the onions.Add one bay-leaf, four cloves and one centimeter of a stick of cinnamon.

 

Cut half a red cabbageinto slices and put in to the pot.Add half a cup of apple juice and two tablespoons of vinegar.

Let it simmer for 30-40 minutes at medium heat.

Serve with potatoes or dumplings.

Creamy Savoy Cabbage

Cut away the stem of the leaves of one savoy cabbage. Put the leaves in a sieve.
 
Put some water in a pot, hang the sieve in the pot, close the pot and bring the water to a boil. Blanch the cabbage in the steam for about 10 minutes.
 
Rinse the blanched cabbage with cold water and cut it into strips.
In a small pot melt two tablespoons of butter under constant stirring add four tablespoons of flour. Heat and stir until the flour becomes golden, then add one cup of milk and one cup of cream. Bring to a boil.
 
Add the cabbage stripes and 250 grams of diced bacon. Cover the pan and let it simmer at medium heat for 10 minutes.Serve with potatoes.

Celery Gratin with Apple

Cutting and Peeling Apple and Cellery Root Cut one celery root into pieces (quarters) and peel them.Deseed two apples.

Grate apple and celery into an oven-proof pot.

Grated Vegetables and Herbs Before the Oven

Add one peeled cardamom capsule, a squeeze of lemon, a pinch nutmeg, one teaspoon of garlic flakes, 25 grams of chopped pine nuts and 150 ml of cream and 150 ml of milk. Mix and bring to the boil with stirring.

Afterwards bake it for 40 minutes at 175 degrees Celsius.

Mashed Potatoes with Green Beans

Mashed Potatoes

Peel eight potatoes and put them together with some water in a pot. Close the pot and boil the potatoes for 30 minutes (after 10 minutes add the green beans, see below).

 

Potatoes with Butter and Rosemary
Mash Potatoes and add Cream
Turn off the heat and drain the potatoes. Put the potatoes back in the pot together with a tablespoon of butter, one teaspoon of salt and a pinch of rosemary.
 
Put the pot back on low heat and start mashing the potatoes. Gradually add one cup of cream.

 

Serve with some fried bacon pieces.
 

Green Beans

Remove the ends from 500 grams of green beans, put the beans in a sieve and blanch the beans in the sieve above the potatoes for 20 minutes.
 
Coarsely grind two slices of hard bread. In a pan melt two tablespoons of butter, add the bread crumps and brown them while stirring for 2 minutes.
