Corn Salad with Bacon and Pears

Corn Salad with Bacon

(2 servings)

In a heated pan fry 200 grams of dices bacon.

Remove the roots from four handfuls of corn salad and wash it. Put the salad on two plates.

Peel one pear and cut it into eight slices. Arrange the pear slices on the salad and add the fried bacon.

Crème Fraîche dressing

Finely chop half an onion and a handful of chives. Mix with four tablespoons of vinegar, eight tablespoons of oil, two tablespoons of crème fraîche and one teaspoon of mustard. Spice with half a tablespoon of sugar, one tablespoon of salt and pepper.

Peanut Sesame Root Vegetables

Peel and dice one onion. In a big pan heat a tablespoon of vegetable oil add the diced onion, a chilli and a teaspoon of garlic powder.Fry until the onions are translucent.
Peel two beetroots, four carrots and two parsnips. Cut the vegetables into medium sized cubes and add put them in the pan as well.Fry the vegetables for 2 minutes than add half a cup of rise vinegar, cover the pan and let simmer for about 20 minutes.

When the vegetables are soft add three tablespoons of peanut butter, half a cup of soy sauce and a handful of sesame. Add salt and pepper to taste.

Serve the vegetables with rice, potatoes or pasta.

Sweet Carrots

Peel and cut an onion as well as eight to ten carrots.

In a small pot melt a tablespoon of butter and add the diced onions. Fry them until translucent, then add the carrots. Fry the carrot for about 2 minutes, then stir them and add half a cup of stock and half a cup of apple juice. Let it simmer for 20 – 30 minutes (depending on how soft you like the carrots).

Spice the carrots with salt, pepper and fresh parsley.

Cream-Baked Fish

Baked Potatoes

Wash 500 grams of potatoes thoroughly and cut them in half or quarters so that they all have the same size. Put the potatoes in boiling water and cook them for 3 min in a covered pot. Drain the potatoes and steam them dry. Add one tablespoon of olive oil, one table spoon of HP Sauce (brown sauce), a pinch of salt and pepper and turn around, so it is well blended. Spread the potatoes on a plate lined with baking paper.

Fish

Rinse and dry two fish fillets and put them in a small ovenproof dish. In a small bowl mix one tablespoon of flour with 50 ml of cream. Spread cream mixture over the fish and sprinkle with salt and pepper. Place the dish on the plate next to the potatoes and bake in the oven at 225 degrees Celsius for about 15 minutes – the potatoes should be golden.

Summer Vegetables

Cut half a cucumber and 250 grams of tomatoes in small pieces. Melt a tablespoon of butter in a pen and stir fry the vegetables for 2 minutes until they are warm.

Pommes Duchesse

Peel 750 grams of potatoes and put them in a big pot. Add one teaspoon of salt and enough water to cover the potatoes. Bring the water to a boil and let the potatoes simmer for 25 minutes (keep the lid on the pot).

Drain the potatoes and mash them. Add one egg and two tablespoons of butter and a pinch of nutmeg.

Put the mixture in a piping bag with a star-shaped nozzle. If you do not have a piping bag use a freezer bag and cut off one corner. Form tuffs on a oiled baking tray.

Bake the pommes duchesse in the oven at 180 degrees Celsius for 12 minutes.
