Pumpkin Soup

Soup

For two persons peel a small red kuri squash,  four potatoes and one onion  and cut them into small pieces. Melt one tablespoon of butter in a pot and add the vegetable pieces and roast them gently. Then add one cup of vegetable stock and let it simmer until the vegetables are soft (about 30 minutes). If necessary add some more water.

Now you can either just mash the potatoes for a coarse soup or use a hand-held blender to get a finer soup.

Toppings

Pumpkin soup goes very well with pieces of roasted bread, bacon or roasted pumpkin seeds.

Cheesy Potato Soup

For this soup you need 1-2 cups of left-over cheese sauce as well  as 4 cooked potatoes.

In a pot heat the cheese sauce together with the potatoes and one cup of milk. When the potatoes are really soft mash them. Spice the soup with salt and pepper.

In a small pan roast 250 grams of diced bacon and add one sliced leek and a pinch of cuminsalt and pepper. Cook it for about 15 minutes.

Put the soup in two bowls and add the leek.

Brussels Sprout Ravioli

Pasta Dough

Knead 300 grams of plain flour, 2 eggs, 4 tablespoons of water and a pinch of salt to a dough. The dough should be one not to wet ball. Cover it and let it stand for about 40 minutes.

Brussels sprout

Remove the outer leaves of 400 grams of brussels sprouts. Set aside half of them. Hash the other half in pieces.

Fry 50 grams of bacon crisp, add the chopped brussels sprouts and stew for about 5 minutes. Add 50 grams of cream and let reduce until the liquid vanished, then mix with 2 tablespoons of breadcrumbs, paprika and pepper.

Vegetarian Version:

Substitute the bacon with chopped walnuts.

Ravioli

Bring 3 liters of water and a pinch of salt together with the left over brussel sprouts to a boil in a big pot.

Roll the pasta dough on the floured worktop. Cut the dough in squares or circles with a diameter of 8 centimeters. Put some of the brussels sprouts filling on each dough piece and fold them to Ravioli. Press together the edges with wetted fingers.

Cook the raviolis successively in the boiling water for 3 minutes.

In a big pan melt a tablespoon of butter add 1 tablespoon of oilve oil, a chilli, 4 tablespoons of the ravioli water, the cooked ravioli and the decanted brussels sprouts. Spice with a handful of parsley, a pinch of nutmeg, salt and pepper.

Chicken Leek Pancake

Dough

For each person mix 2 eggs, 200 ml of water and 100 g of plain flour. Let it set for about half an hour.

Filling

Cut the leek and the chicken breast into small pieces. Heat 1 tablespoon of vegetable oil in a pan and fry the chicken. Add the leek and some cumin, salt and pepper. When the leek is cooked, put the mixture in a bowl.

Pancakes

Melt half a tablespoon of margarine in a pan. Pour some of the dough mixture into the pan so that the pan base is covered. When the topside of the pancake is not liquid any more, turn it. Arrange some of the chicken leek mixture on the pancake add one handful of grated cheese. Cover the pan and wait until the cheese melts.

Transfer the pancake onto a plate.

Chicken Curry

In a hot heavy pan without any oil roast a pinch of caraway (ajwain), pepper (kali mirch), cardamom (elaichi), coriander (dhania), fennel (saunf), clove (lavang), cinnamon (dalchini), nutmeg blossom (javitri), nutmeg (jaiphal), nigella (kalonji) and fenugreek (methi) together with a bay leaf.

Grind the roasted herbs together with 3 cloves garlic, 1 chilli (lal mirchi) and 1 tablespoon of cumin (jeera), coriander (dhani), fenugreek (methi) and paprika each.

Heat 1 tablespoon of olive oil and roast 1 tablespoon of mustard seeds(rai) till they pop. Mix the oily mustard seeds with the herbs. Keep the pan for later.
 
Cut 4 chicken breasts in small pieces and marinade them with 100g yogurt mixed with half of the herbs. Let the chicken marinate for at least 30 minutes.
Melt 1 tablespoon of butter in a large bowl. Fry 2 sliced onions together with the second half of the herbs.
 
Add one can of sliced tomatoes and 125ml cream.Let it simmer for about 20 minutes.
 
Add a handful of grounded cashews and some coriander leaves.
Heat up the pan again and fry the chicken.
 
Serve the curry with the chicken and some rice or naan bread.

Sweet Carrots

Peel and cut an onion as well as eight to ten carrots.

In a small pot melt a tablespoon of butter and add the diced onions. Fry them until translucent, then add the carrots. Fry the carrot for about 2 minutes, then stir them and add half a cup of stock and half a cup of apple juice. Let it simmer for 20 – 30 minutes (depending on how soft you like the carrots).

Spice the carrots with salt, pepper and fresh parsley.
