Feta Courgettes Shrimp Pasta

Cook four sliced spring onions with one teaspoon of granulated garlic translucent in two tablespoons of vegetable oil. Spring Onions with Garlic

Salmon with Rocket Mustard Sauce and Pearled Spelt

Salmon with Rucola Mustard Sauce and Pearled Spelt

(2 servings)

 

Wash 160 grams of pearled spelt. Washed pearld spelt
Pearled Spelt with Spring Onions Add 200 millilitres of water and four sliced spring onions and let it simmer for 20 minutes.
In a small pot boil down one cup of cream together with one teaspoon of mustard. Mustard Cream
Salmon with Potatoes In a small pan with one teaspoon of vegetable oil sear two salmon filets together with three sliced tomatoes.
Let the salmon simmer on the skinny side until done. Salmon with Potatoes
Rucola Wash and cut two handfuls of rocket salad and add it to the mustard cream.

White and Green Asparagus Pasta

White and Green Aspargus Pasta

Cook 250 grams of washed and cut green asparagus in salt water for 7 minutes. Green Aspargus
Blonde Roux In a small pot melt two tablespoons of butter and mix it with one tablespoon of flour.
Deglaze the blonde roux with one glass of the asparagus cooking water. White Sauce
White Aspargus Add three quarters of a cup of crème fraîche, one glass of sliced white asparagus and salt and pepper to taste.

Meatballs with Red Kuri Squash and Spinach

Meatballs with Pumpkin and Spinach

(2 servings)

 

Wash and slice 300 grams of potatoes and place them on a oven tray and sprinkle with two tablespoons of olive oil, one teaspoon of cumin and salt and pepper to taste.

Bake them for 30 minutes at 200 degrees Celsius.

Potato Wedges
Garlic and Onions Cook one diced onion translucent in one tablespoon of vegetable oil together with one teaspoon of garlic powder.
Mix 250 grams of minced meat, one egg, one teaspoon of mustard, one tablespoon of breadcrumbs and salt and pepper to taste, form meatballs and roast them from both sides together with the onions. Minced Meat with Egg and Spices

Diced Pumpkin Remove the seeds from one red kuri squash and dice it.
Roast the squash dices together with the meatballs. Pumpkin with Meatballs
Frozen Spinach Add 200 grams of frozen spinach and let it simmer for 5 minutes.

Courgette Eggplant Quiche with Feta Cheese

Knead 230 grams of flour, two tablespoons of sesame, 140 grams of margarine, one tablespoon of vinegar, 70 millilitres of water, one pinch of baking powder and one pinch of salt into a dough and line an oven dish with the dough. Dough Ingredients

Spring Onion and Garlic Roast two spring onions and spring garlic in one tablespoon of vegetable oil.
Add one washed and sliced courgette and one washed and sliced eggplant and roast gently. Courgette and Eggplant
Feta Cheese Add 200 grams of diced feta cheese and spice with one teaspoon of thyme and salt and pepper.
Place the vegetables in the dough lined oven dish and douse with a mixture of 150 grams of crème fraîche and two eggs. Quiche with Vegetables

Sorrel Courgette Pasta with Tomatoes

Sorrel Courgette Pasta with Tomatoes

Cook 250 grams of pasta and 2 eggs in sufficient salt water for 10 minutes. Pasta and Eggs
Spring Onion Cook two sliced spring onions translucent in one tablespoon of vegetable oil.
Add two sliced courgettes and roast them gently. Courgette
Courgette and Tomatoes Add 250 grams of halved cherry tomatoes and let the vegetables simmer.
Wash and slice 100 grams of sorrel into pieces. Sorrel
Sorrel, Creme Fraiche and Egg Blend the sorrel with 250 grams of crème fraîche, the two boiled eggs and some cooking water of the pasta.
Spice with one teaspoon of dill and salt and pepper. Sorrel Creme Fraiche
Green Pasta Mix the pasta with the sorrel crème fraîche.
Spice the cooked vegetables with salt and pepper. Cooked COurgette and Tomatoes
Sorrel Courgette Pasta with Tomatoes Serve the pasta with the vegetables and some Parmesan cheese.
